Chocolate Covered Goldenberry™

Goldenberry™ Margarita

1 oz of tequila

1/2 oz of Triple Sec

2 ounces of Goldenberry™ juice

1/2 tsp of lemon juice

Crushed ice


Shake all ingredients together in a mixer

Serve in a cocktail glass

Wet the rim of the glass and dip in sugar…enjoy

Goldenberry™ Summer Salad


Romaine lettuce

8 strawberries sliced

8 Goldenberrys™ cut up

Gorgonzola cheese crumbles

Raspberry vinaigrette

Combine all ingredients and toss with dressing


16 ounces of fresh of hearts of palm drained and chopped

1 cup shredded mozzarella

1/2 cup grated parmesan cheese

1 cup chopped green onion

1/4 cup sour cream

3/4 cup mayonnaise


Preheat the oven to 350 degrees

Lightly grease a glass pie plate

In a medium bowl mix together the hearts of palm, mozzarella cheese, parmesan cheese, green onion, sour cream, and mayonnaise

Spread into greased pie plate

Bake uncovered for 20 minutes, or until light brown and bubbly

Serve with crackers or tortilla chips

Hearts of Palm Salad


1 container of Volcano Produce™ Goldenberry™

3 oz semi-sweet chocolate, chopped


Peel back husk and rinse goldenberries

Pat completely dry

Melt the chocolate in a microwaveable-safe container on high for 60 seconds

Remove, stir and microwave for 10 seconds more until the chocolate has completely melted

Allow chocolate to cool slightly

Line a pan with parchment or waxed paper

Holding the Goldenberry™ by the husk, dip the bottom half of each Goldenberry™ into the melted chocolate

Twist the Goldenberry™ so that the chocolate forms a “tail” at the end

Set Goldenberry™ on parchment paper

Repeat with remaining goldenberries

Let cool and serve
